15. OVEN BAKED POTATOES

a2 INGREDIENTS
  • 500gr baby potatoes
  • 3 cloves of garlic, smashed
  • 1 shallot, chopped
  • 1 branch of thyme
  • 2 tbsp. olive oil
  • 50gr Pate Royal Forester mousse
  • 10gr Parmesan cheese, grated
  • 20g salad dressing with apple cider vinegar and olive oil
a2 METHOD
  1. Melt the butter in the pan and meunire with flour until it turn golden, add milk and whisk quickly until it thicken and consistent
  2. Remove from the heat and whisk in the Pate royal.
  3. Pre-heat the oven at 180oc for 15 minutes
  4. Heat the pan with olive oil, stir fry garlic and shallot to golden, and add baby potatoes and thyme. Pan-fry for a minutes then remove from the heat
  5. Place baby potatoes onto the tray, cover with béchamel pate sauces and top up with grated parmesan cheese. Put in the oven and bake for 15-17 minutes.
  6. Serve warm on dish with salad
