10. KIMPAP

a2 INGREDIENTS
  • 500gr Japanese cooked, drizzel with rice vinegar and well stired
  • 5 Nori sheets
  • 100g Pate Royal Duck mousse with peppercorns
  • 200gr beef chuck
  • 50gr chives, chopped
  • Dark soy sauce
  • Green Mustard
a2 METHOD
  1. High heat the pan with olive oil, sear the beef quickly for 15-20 seconds each side, remove from the heat and let it sit 5-7 minutes
  2. Bake the beef till proper level, carve it into long pieces.
  3. Place a Nori sheet vertically on the bamboo curtain, spread the rice over the Nori in proper amount
  4. Spread Pate Royal on the rice, add beef vertically near by the egde, sprinkle chives over the beef
  5. Firmly roll it horizontally into nice formed roll. Slice into small pieces
  6. Serve with soy sauce and green mustard.
