11. ICEBURG LETTUCE ROLLED WITH DUCK MOUSSE

a2 INGREDIENTS
  • 1 iceburg lettuce
  • 300gr cabbage, shreded
  • 100gr purple cabbage, shreded
  • 1 cucumber, diced
  • 50gr sprouts
  • 100g Pate Royal Duck mousse with peppercorns
  • 2 tbsp. olive oil
  • 1 tbsp balsamic vingar
  • Salt and pepper
a2 METHOD
  1. Detach the lettuce, rinse off with water and let it drained
  2. Slightly toss the cabbage and purple cabbage with olive oil and balsamic vinegar, season with a pinch of salt and pepper to taste
  3. Put a slice of cucumber and a spoon of Pate Royal onto the lecttuce leaf, top over with sprouts and serve on plate
